Did Someone Say Chicken Salad?

So today I hosted a jewelry and accessories show. Fun times with gorgeous ladies, trying on shiny baubles and lacy scarves and what have you. Who would have thought that the real star of my show was my chicken salad? Color me confused! I keep telling people that generally speaking…I DON’T DO KITCHEN. But every now and again, the mood strikes and my inner Rachael Ray shows up with something yummy. Anyway, by popular demand, I present the recipe for the world’s easiest chicken salad ever. Enjoy!

Ingredients (serves 20)

canned chicken breast (in water), 4 large cans

diced tomato, onion, green & red pepper mixed ( pico de gallo is a tasty substitute)

mayonnaise

garlic salt 3 tbsp

olive oil, 2, tbsp

black pepper, 2 tbsp

Directions

1. Drain canned chicken breast; empty into large mixing bowl.

2. Add diced tomatoes, peppers and onions.

3. Add mayonnaise and stir mixture till completely mixed. Be careful not to over-shred chicken breast pieces while stirring.

4. Sprinkle garlic salt, black pepper and olive oil. Stir again lightly.
